On January 21, 2025, we had the pleasure of hosting a special dinner in collaboration with Matsumoto Shuzo.
Matsumoto Shuzo is a long-established sake brewery in Kyoto with more than 200 years of history, known for its philosophy: “No technique can surpass the quality of the ingredients.” During the event, guests enjoyed a wide-ranging talk about everything from rice cultivation to sake brewing.
We would like to express our sincere gratitude to all of our guests, to Mr. Masaharu Matsumoto of Matsumoto Shuzo, and to everyone who supported this special evening.
For this event, we prepared the following sake lineup:

・Hinodezakari
Guests also enjoyed Hinodezakari, Sawaya Matsumoto Junmai, and Momo no Shizuku served warm. As the evening took place on a cold day just before Daikan, the coldest period of the year, these warm sake selections were especially popular.
The tempura menu featured sake-friendly dishes such as whole fried clam and fugu milt tempura, while the course also included dishes such as butterfish grilled with Saikyo miso.
We were also fortunate to receive freshly made sake kasu from Matsumoto Shuzo, which is not usually available on the market. Special dishes using this sake kasu, including hassun and kasu soup, were exceptionally well received, and paired beautifully with the sake.
This was our first collaboration with a Kyoto sake brewery, and we believe guests were able to enjoy an evening filled with rich history, excellent sake, and cuisine that truly reflects the spirit of Kyoto.
